Saltena
The Salteña project was born from living with the Quiroga’s, a traditional South American family from Cochabamba, Bolivia.
As a person who has grown up in Western Europe I instantly became captured by the sense of family, unity and the close bond shared by all the Quiroga’s and the people they opened their home to.
Thirteen members of the family including myself came together on most Sundays to spend time with each other talk about our lives and help cook different foods for the Sunday meal.
I loved the atmosphere in the home on Sundays, it was the only day I would lament leaving the house. We would all pack into the tiny kitchen, lean over, around and past everyone treading on each others toes to get in the kitchen and help. Arms intertwined over each other to add ingredients, hold the bowls or take turns kneading the dough.
Salteñas are savory pastries filled with beef, pork or chicken mixed in a sweet, slightly spicy sauce, and sometimes also containing peas, potatoes and other ingredients.
